Spain drinks over 67 million cups of coffee a day, but specialty accounts for barely an estimated 3-5% of volume. The premiumisation signal is already in the data

One macro indicator confirms it: robusta fell from 63.6% to 49.6% of imported green coffee in a single year. Arabica now matches robusta in Spanish imports — the foundation of a palate beginning to shift towards higher quality.

The legacy of torrefacto remains the great cultural barrier, but also the biggest opportunity: re-educating that palate doesn't require theory, it requires a perceptible improvement that is easy to buy and consistent.
